Thanksgiving at Bostonist's House: Sweet Potato Casserole

9680 yams cc_lr Web.jpgWhile Bostonist hasn't actually ever tackled making a Thanksgiving dinner, we are always up for tackling the traffic home to our parents' house. Perhaps some day, we'll decide to make our own Turkey Day meal, but for now, we'll just enjoy mom Linda Lou's good home cooking. She makes some damn good sweet potatoes each year and according to her, it's quite a simple recipe that any novice cook can master. Below is the gospel right from Linda Lou:

Ingredients
  • 2 large cans of sweet potatoes or yams, drained (but set aside 1/2 cup of the liquid for later on)
  • 3/4 cup of brown sugar
  • 1/2 stick of butter
  • 1/2 tsp. of salt
  • This is seriously easy, folks. Preheat the oven to 350 degrees and find a casserole dish large enough to fit both cans' worth of taters. Place the potatoes in the dish and then sprinkle the brown sugar over them. Then take the half stick of butter and cut it into little pieces; put the butter all over the potatoes. Pour that reserved liquid from the cans all over the mixture and then sprinkle the salt over it all.

Cover the dish with foil and place in the oven for 30 minutes. After 30 minutes, take the dish out and take the foil off. Pop it in the oven for another 30 minutes. This will make it all carmelized and delish.

That's it...Sweet Potato Casserole. A Thanksgiving Day dish easy enough for even the most kitchen-phobic. Enjoy kids.

Photo of casserole is not Linda Lou's but it's close enough
