With school in session and social calendars already filling up through the end of fall, it's getting harder for many of us to check off all the foodie to-do items on our lists, like:

1) Stock up on late-summer and early-fall local vegetables while the gettin's good.
2) Try some of Will Gilson's herb-saturated menu items before winter takes the greens inside.
3) See what Mr. Local, Michael Leviton, is cooking up for fall at Persephone.
4) Stop by the Craigie Street Bistrot before it moves to a larger space in Central Square.
5) Seek out more heirloom products to keep them from going extinct.

So it's cool that we'll be able to kill, like, seven humanely-raised organically-fed quail with one stone next week, because Chefs Collaborative, a national nonprofit that works with chefs to put sustainable, local goods on the menu, is hosting an epic dinner with an all-star lineup of local chefs at Persephone on September 28, in close collaboration with Slow Food Boston.

More event details and a whole lotta chef name-droppin' after the jump...

In the dinner dugout (so to speak) will be:

- Michael Leviton of Newton's Lumiere and Fort Point's new composting, recycling hotspot Persephone

- Jamie Bissonnette of Ken Oringer's (paradoxically green) steakhouse, KO Prime

- Ed Doyle of food consulting firm Real Food

- Will Gilson of Cambridge's Garden at the Cellar (a.k.a. the "Doogie Howser of Boston cooking")

- Carolyn Johnson, of socially-conscious Cambridge institution Rialto

- Jacqueline Kelly of the MFA's Bravo restaurant

- Tony Maws of Craigie Street Bistrot

- Peter McCarthy of CSA-owning Somerville resto EVOO and Arlington's farmer-friendly Za Restaurant.

The chefs are still assembling their ingredients and planning their menus, but according to Elizabeth Kennedy over at Chefs Collaborative, Bissonnette will be breaking out some Thai-style ceviche and some of his signature charcuterie, and Kelly will be making "Honey Smoked Hiramasa with Pumpkin Seed Cracker, Pickled Local Squash, and Bloody Mary Tomato Salad with Heirloom Cherry Tomatoes, Rain Organic Vodka Gelee, Horseradish Cream" (yum!). Gilson will be cooking up some venison, and may try to use some chocolate nibs from Taza Chocolate (the local chocolatier is a sponsor of the event). Gilson is also one of four New England chefs who have agreed to include some endangered, hard-to-find food items from Slow Food USA's Ark of Taste, so you may find some of those limited-edition goodies popping up in his dishes.

Tickets are $100 for the whole shebang. Sure, we're in a recession, but let's face it - we spent nearly that much during our last visit to the South End, and at least this time, proceeds directly benefit Chefs Collaborative.
