Oyster lovers like Bostonist were locavores long before there was a term for it. Waiters might tell you differently, but there's really no point in eating an oyster that didn't come from nearby waters. The decline in freshness and quality happens very quickly. Massachusetts is blessed with many of the nation's finest oyster beds—cold water oysters are the best—and few can compare with those of Duxbury's Island Creek Oyster Company, which is now opening a restaurant in Kenmore Square.
